When I think of summer I imagine frolicking through the green fields snacking on the sweetest cherries. OK so more like hot, humid and sticky..but either way summer is ripe for cherry season! As much as I love the simplicity of snacking on some cold cherries to cool off, I was inspired to create a salad by adding some bitter greens and spicy cayenne to balance the sweetness. It’s super simple, yet packed with nutrition.
Cherries are rich in powerful anti-inflammatory compounds and gut-friendly fiber. Arugula and all bitter greens top the charts for increasing longevity and calcium-rich sesame seeds are great for your bones. Plus all the flavors create an umami-rich flavor profile which is sure to have you clean the plate! Wishing you a fun and healthy summer friends!
2 cups of pitted cherries cut in half
2 handfuls of arugula (AKA “rocket”)
2 Tbsp toasted sesame seeds
2 Tbsp extra virgin olive oil+ 2 Tbsp for sauteeing cherries
2 Tbsp balsamic vinegar
Pinch of cayenne
1/4 tsp Himalayan salt
Heat olive oil in pan (I use cast iron) on medium high. After a few minutes add cherries and sautee until soft about 3-4 minutes. Lower heat to prevent burning. Sauteeing the cherries caramelizes them and brings out their sweetness even more.
In a separate pan toast the sesame seeds on low heat and watch carefully so they don’t burn. You will start to see them turn brown and smell the nutty fragrance permeate the kitchen when they are nice and toasty.
While they cook prepare a plate with arugula. Top with cherries and drizzle with olive oil and balsamic vinegar. Add salt, cayenne and toasted sesame seeds. Mix well and enjoy!
