Herbed Roasted Roots

One of the greatest pleasure in life is gathering with loved ones around the table to break bread. It is these intimate connections that make life so fulfilling. The simple pleasures of cooking, community and creating delicious moments together are what colors life with so much joy. If you follow my blog you already know how much I love my roasted veggies, and with Fall in full swing I make variations on this dish on the regular. Roots help me feel grounded and remind me of my connection to our sacred planet Earth. To see the bounty birthed from the soil is absolutely magical. The luscious colors and unique shapes that shoot through the ground, chock full of nourishment and flavor makes me smile. Full of fiber, roots kick up the satiety scale to keep your hunger tamed for hours. For this dish I chose baby pink potatoes, sweet potatoes, beets, red onions and Brussels Sprouts. The gorgeous colors make this dish a visual feast as well. To arouse the flavor of the veggies, I added the tang of goat cheese and squeeze of lemon. Mouthwatering goodness!

Ingredients
2 sweet potatoes
2 beets
1 pound Brussels Sprouts
1 red onion
1 pound baby pink potatoes
Sea salt
1/2 lemon
Bunch of fresh thyme
2 ounces goat cheese
3-4 Tbsp olive oil

Ingredients
Preheat the oven to 435 degrees and quarter the vegetables. Try to get an even cut so they cook evenly as well. I find that the beets always take the longest to cook through (unless you prefer it more al dente) so you can start them a half hour earlier and then add the rest of the veggies. Or you can just remove the rest of the veggies after about 35-40 minutes and let the beets continue to cook until fork tender.
Place all veggies on a baking sheet and drizzle with some olive oil to get an even coat. Sprinkle with some sea salt and all the fresh thyme. Mix thoroughly and place in the oven for about 35-40 minutes. Remove from the oven and sprinkle a bit more sea salt and top with goat cheese. Squeeze the fresh lemon over the veggies to brighten the entire dish. It’s amazing what a bit of acid can do to liven up the flavor. Bon App!
