Watermelon Basil Bites

Summer is in full swing and NYC is melting! As the heat and humidity create a sticky film over the city, we try to find refuge in all things cool and icy. Nothing says summer like a cold, juicy bite of watermelon. One of my favorite ways to cool off is to sink my teeth into an icy piece of fruit.

While I love the simplicity of watermelon I wanted to get creative by adding flavors that you don’t always think compliment fruit. I have been growing a mini garden of sweet and purple basil which is now in full bloom (yay) and decided to add a small handful. I added some lemon for a twist and ended up with a tangy and juicy sweet snack. Watermelon is super hydrating, full of vitamin C, potassium and lycopene. I love using citrus in dishes to energize and awaken your senses, while adding more vitamin C. The fragrant basil adds more plant medicine and a unique, sophisticated flavor profile. It’s like taking a delicious bite of summer!


1 cup of cubed cold watermelon
1/2 juice of lemon
tsp lemon zest
small handful of chopped basil
Pinch of pink Himalayan salt


Mix all ingredients and enjoy!
