Baked Crispy Sweet Potatoes

When I get a craving for fries I run to the market and grab a bunch of sweet potatoes or yams, come home and satisfy my desire for that sweet n’ salty crunch! Loaded with fiber, beta-carotene and potassium they are one of nature’s superfoods in my opinion. I’m sure you can get them just about anywhere these days but there’s nothing like playing in the kitchen and taking the time to appreciate the process of cooking. Like all fries the dipping sauce or dressing ups the flavor profile so I whipped up a roasted garlic avocado mash to join the party. Creamy, delicious and full of heart-healthy fatty acids and folate this pairs perfectly with the fries. I hope you have as much fun as I do making them!

Ingredients

2 sweet potatoes
Head of garlic
2-3 Tbsp grapeseed oil
1/2 tsp curry
1/2 tsp turmeric
1/2 tsp ground ginger
1/2 tsp cinnamon
1/4 tsp Himalayan salt

Directions

Preheat oven to 400 degrees F. Wash and dry potatoes in a vinegar and salt water bath. Peel them and slice into 1/4 inch long slices and 1/4 inch-wide strips. Try to have even slices so they cook evenly as well. The thinner they are the crispier they will be. Toss the sliced potatoes with oil and spices (except the salt) in a bowl so they are coated well. Prepare a baking sheet with parchment paper and stack the strips. Coat the garlic in some oil and add to the pan. Bake for about 20 minutes until they brown. Keep in mind that some pieces will be crispier, which is ok. As soon as you take them out of the oven hit them with salt and allow them to cool before digging in. Save the garlic for the avocado mash (see recipe below) They are super yum as is but you can try dipping them in my roasted garlic avocado mash for even more noms.

Roasted Garlic Avocado Mash

Ingredients

2 avocados
Head of roasted garlic (cooled)
Juice of one lemon
1/4 tsp Himalayan salt
Handful of parsley
3-4 Tbsp water

Directions

Place all ingredients in your favorite blender and squeeze the garlic out of its skin. Remember to let the head of garlic cool first to protect your fingers from the heat. Blend until smooth and enjoy with the fries or with any other favorite dish. Enjoy!
