Superfood Energy Bites

I like to be prepared when a craving strikes! When I need a quick fix for something sweet and full of chocolate these bites work their magic.
Bonus points: they are packed with anti inflammatory, heart-healthy fatty acids, protein, magnesium, iron, folate, B vitamins..and they give me a boost of energy!
I like to experiment with different flavors but I will always say yes to cacao and coconut 😉

Ingredients

1/8 tsp Himalayan Salt
1/4 tsp vanilla
1/4 tsp cinnamon
1/3 cup hemp seeds
1/4 cup raw ground cacao
2 soaked pitted dates
1 Tbsp coconut oil
2 Tbsp unsweetened coconut milk
2-3 Tbsp unsweetened shredded coconut
Yield: About 8 Bites.
Directions
Combine all ingredients except the shredded coconut, and place in your favorite blender. Pulverize until well combined.
 Wet your hands slightly to make the rolling process smoother. Use a measuring Tbsp to help create even pieces and roll into balls.
Roll over shredded coconut and feel free to dig in! They are ready at this point, but I prefer them a bit cooler and more firm after they have chilled in the fridge for about 30 minutes.
They should last about a week in the fridge or a month in the freezer. I devoured them in a week..
