One of my favorite foods on the planet is the creamy and luscious avocado. While it is an excellent source of monounsaturated fat, folate, potassium and vitamin E, it is actually a single-seeded berry. Who knew?! In addition to being a tasty superfood, I love how versatile it is. You can eat it alone or as part of a savoury or sweet treat. When I want a quick, satisfying and nourishing snack avocados are on the top of my list. For this particular snack I added some olives, another great source of heart-healthy monounsaturated fat and fiber, which added some texture and a briny bit! Feel free to enjoy it by the spoonful or as a side dish. This snack is not only easy and satisfying but it will help maintain stable blood sugar and help prevent cravings for added sugars and other refined and processed carbohydrates. Enjoy!
1/4 tsp Himalayan salt (optional if your olives are super briny)
juice and zest of half a lemon
5 chopped black olives
Pit one avocado and remove the skin. Take the beautiful green flesh and chop it into cubes. Add the lemon juice, zest and salt if you feel the dish isn’t salty enough. The black olives I uses weren’t as salty, but if the olives you choose happen to be more briny you might want to omit the salt. Mix all ingredients thoroughly and enjoy by the spoonful!
