One of my favorite dishes to make is roasted root veggies. On the menu tonight I chose carrots with a spice blend of curry, cloves, cinnamon, turmeric, cumin, ginger, and pink Himalayan salt.
For added yummyness I made a tahini dressing and sprinkled some pomegranate jewels on top Can we talk about the aroma in my kitchen right now?!
Yes, carrots come in purple too! In fact the wild ancestor of our present-day orange carrot is a plant with a purple taproot that is native to Afghanistan. It was first cultivated several thousand years ago and by the 1300’s purple carrots were growing in Spain, France, Germany, and the Netherlands.
The white and yellow versions were actually mutant varieties. By the 16th century Europeans were growing four colors of carrots- red, yellow, purple, and white.
We can thank the concentration of anthocyanin compounds for the deep purple hue, which by the way have more antioxidant activity than the beta-carotene in orange carrots.
Another fun fact: the beta carotene in carrots becomes more bioavailable when cooked and consumed with some fat.
Ok enough with the history lesson let’s eat!
- About 6 carrots (rainbow variety of available)
- 1/4 tsp curry
- 1/4 tsp cloves
- 1/2 tsp Himalayan salt
- 1/4 tsp cumin
- 1/4 tsp ground ginger
- 1/4 tsp cinnamon
- 2 Tbsp olive oil
- 1/2 cup pomegranate jewels
Preheat oven to 400 degrees
Place a piece of parchment paper on a baking sheet and set aside.
Mix all spices in a separate bowl
Cut carrots lengthwise and place into parchment paper in baking sheet. Smother them with the olive oil. Sprinkle the spices and massage carrots to coat evenly. I like to use gloves to prevent staining from the spices, though that can be fun!
Bake in oven for about 20 minutes or until desired soft texture.
Allow to cool a bit and drizzle with the luscious tahini. Sprinkle the gorgeous pomegranate jewels on top and dig in!
1/3 cup Raw tahini (sesame paste)
1/2 cup fresh parsley
3/4 Tbsp Sea salt
Juice and zest of 2 lemons
1 chopped garlic clove (optional)
1/3 cup water
Blend all ingredients and if it’s too thick add water until you reach desired consistency.
