Roasted Butternut Squash

I love Fall for many reasons..the crisp air and foliage turning..and making my favorite recipes using local produce.

 

I invite you to try this simple dish that contains a treasure trove of nutrients such as beta-carotene, potassium, vitamin C and fiber. The spices add both flavor and anti-inflammatory benefits. Bon App! 

 

 

Ingredients

  • 2 cups peeled/cubed butternut squash 
  • 1 tsp cinnamon

  • 1 tsp cloves 

  • 1 tsp cumin

  • 1 tsp sea salt

  • 2 tbsp olive oil

Directions

 

Preheat oven to 375 degrees.

 

Mix all spices thoroughly to get an even coat on the squash. Spread squash on a baking sheet covered with parchment paper.

 

Bake for ~40-45 minutes until tender. Garnish with parsley and enjoy!
