Cucumber Fennel Slaw recipe

I wanted something crunchy, refreshing and simple to make so I opened my fridge and grabbed some cucumbers and fennel. Both greens are great sources of fiber so they are super filling! 

Cucumber is a great source of silica which helps maintain skin elasticity healthy collagen. I add added some parsley for more fiber and vitamin C. Bonus points: It can help remove toxins like heavy metals, while it freshens your breath.


 For that extent a acidic kick I zested some lemon and squeezed the juice for added nutrients. Our liver and hormones love lemons. Lemons are excellent aromatase inhibitors which means they can help create more hormonal balance.





  • 2 cucumbers

  • 1 fennel bulbs

  • handful of parsley
  • 1 large lemon

  • sea salt




Peel a cucumber and cut in half lengthwise. Scoop out seeds and grate. Remove thick outer husk of fennel and cut fronds off. Slice fennel, paper thin and chop fronds

Zest and juice a lemon. Chop handful of parsley and add a pinch of sea salt to taste. Mix all ingredients and Enjoy!
